About the author : Anatolia
The soup Turkish people eat at six in the morning, in winter, and after a long night. It is not a beginner’s dish, and it is not meant to be.
What is paça çorbası (Turkish trotter soup)?
Paça is made by simmering lamb shank and trotters for hours until the collagen breaks down and the broth turns thick and silky on the lips. The meat falls apart into the bowl. It is traditionally finished with garlic and a splash of vinegar, and it has a reputation across Anatolia and the Balkans as a restorative — the thing you eat when you are cold, exhausted, or paying for the night before. Dedicated paçacı shops in Turkey open before dawn to serve it.
How we prepare it at Anatolia Grill
We cook it slowly and serve it hot, with the meat tender enough to break with a spoon, in a broth that has body from the bones rather than from any thickener. 169 CZK. If you have never had it, order it alongside something else — and if you grew up with it, you already know what you are looking for.
Take it home from Anatolia Meat Market
Lamb shanks and trotters for making paça at home are available from the Anatolia Meat Market next door — cuts that are genuinely hard to find elsewhere in Prague. They come from lambs raised on our own farm, and the butcher will prepare them for the pot.
From our own farm, not from a supplier
Anatolia Grill is part of Agro Řeřichy s.r.o., a Czech company that has been working in agriculture, meat processing and gastronomy for more than ten years. We breed our own lambs and fatten our own beef cattle at the farm in Rakovník, process them in our own slaughterhouse, and sell them in our own butchery in Prague — the shop right next to this restaurant. That is the reason the meat on your plate is traceable back to a single chain we control from start to finish.
