About the author : Anatolia

Spiced beef sausage and melted cheese on hot bread. It is as good an idea as it sounds, and it has been around a lot longer than pepperoni pizza.

What is sucuklu kaşarlı pide (sucuk and cheese pide)?

Sucuk is dry-cured beef sausage seasoned with garlic, cumin and red pepper. In an oven it does what it does in a frying pan: the fat renders out, turns red with the paprika, and runs into whatever is underneath. On a pide, with kaşar melting alongside it, that fat soaks into the dough and flavours the whole base. The comparison to pepperoni pizza is obvious and not entirely wrong, but the spicing is different — cumin and garlic rather than fennel and chilli.

How we prepare it at Anatolia Grill

Our own homemade wheat dough, topped with spicy Turkish sucuk and grated kaşar, baked until golden. 310 CZK. It is the pide we sell most of at breakfast time as well as in the evening.

Take it home from Anatolia Meat Market

The sucuk on it is the same halal beef sucuk we sell at the Anatolia Meat Market next door, made from our own beef and sliced to whatever thickness you ask for.

From our own farm, not from a supplier

Anatolia Grill is part of Agro Řeřichy s.r.o., a Czech company that has been working in agriculture, meat processing and gastronomy for more than ten years. We breed our own lambs and fatten our own beef cattle at the farm in Rakovník, process them in our own slaughterhouse, and sell them in our own butchery in Prague — the shop right next to this restaurant. That is the reason the meat on your plate is traceable back to a single chain we control from start to finish.
