The cheapest item on our entire menu at 69 CZK, and the one we would tell a first-time visitor to start with.
What is lahmacun?
Lahmacun is a very thin round of dough spread with a mixture of minced beef and lamb, tomato, pepper, onion and parsley, then baked in a hot oven for a couple of minutes until the edges blister. It is not a pizza — there is no cheese, the dough is paper-thin and the topping is a thin layer rather than a pile. In Turkey you squeeze lemon over it, lay parsley and onion on top, roll it up and eat it with your hands, usually standing up, usually in about ninety seconds.
How we prepare it at Anatolia Grill
We make the dough by hand and bake each one to order — lahmacun that has waited is leathery, and there is no fixing it. The small size is a single portion for 69 CZK, which makes it the easiest way to try one before committing to a full plate. Lemon and parsley come with it.
Take it home from Anatolia Meat Market
The beef and lamb mince spread on it is ground from our own animals. The Anatolia Meat Market next door sells the same mince if you want to make lahmacun at home.
From our own farm, not from a supplier
Anatolia Grill is part of Agro Řeřichy s.r.o., a Czech company that has been working in agriculture, meat processing and gastronomy for more than ten years. We breed our own lambs and fatten our own beef cattle at the farm in Rakovník, process them in our own slaughterhouse, and sell them in our own butchery in Prague — the shop right next to this restaurant. That is the reason the meat on your plate is traceable back to a single chain we control from start to finish.
