About the author : Anatolia
Invented by one man in Istanbul in the 1960s, and now on every serious kebab menu in the world.
What is sarma beyti?
Beyti is named after Beyti Güler, who opened his restaurant in Istanbul in 1945 and created the dish that carries his name. Sarma means wrapped: a grilled kebab of minced lamb is rolled inside thin flatbread, sliced into rounds like a roulade, and served standing in tomato sauce with a pool of garlic yogurt. It is one of the few Turkish dishes with a documented inventor and a documented date, which in a cuisine this old is unusual.
How we prepare it at Anatolia Grill
We grill the minced lamb over charcoal first, wrap it in our own homemade flatbread with garlic and chilli pepper, then slice and serve it with rice, grilled green pepper and tomato, yogurt and tomato sauce. 200 g for 399 CZK. It is the most composed plate on our grill menu — closer to a finished dish than to meat with sides.
Take it home from Anatolia Meat Market
The lamb is from our own flock, and the Anatolia Meat Market next door sells the same meat freshly minced.
From our own farm, not from a supplier
Anatolia Grill is part of Agro Řeřichy s.r.o., a Czech company that has been working in agriculture, meat processing and gastronomy for more than ten years. We breed our own lambs and fatten our own beef cattle at the farm in Rakovník, process them in our own slaughterhouse, and sell them in our own butchery in Prague — the shop right next to this restaurant. That is the reason the meat on your plate is traceable back to a single chain we control from start to finish.
