What is sütlaç (Turkish rice pudding)?

Sütlaç is rice cooked slowly in milk until it thickens, sweetened lightly and often scented with vanilla or mastic. What separates the Turkish version from most European rice puddings is the finish: it is poured into small clay or metal dishes and put under high heat so the surface caramelises and browns in patches, then chilled. You eat it cold, with the burnt skin on top and the cool cream beneath — that contrast is the entire point.

How we prepare it at Anatolia Grill

Ours is baked until the top is lightly caramelised, then served chilled. 179 CZK. After a full grill plate it is the dessert most guests actually finish, which baklava at 229 CZK is not always.
