What is künefe?

Künefe comes from Hatay in the far south of Turkey. Shredded kadayıf pastry — like fine strands of vermicelli — is packed above and below a layer of unsalted stretchy white cheese, baked in butter until both sides are deep gold, then soaked in sugar syrup and served immediately. The cheese does not melt into liquid; it goes soft and elastic, so a spoonful pulls a thread behind it. This only works while it is hot, which is why no serious kitchen has künefe sitting ready.
