Our most ordered premium plate, and the clearest argument for owning your own farm.

What is kuzu pirzola (grilled lamb chops)?

Kuzu pirzola — lamb chops — are cooked simply everywhere in Turkey: salt, fire, nothing else. There is no marinade to hide behind and no sauce to correct anything, because a good chop from a young animal does not need either. What separates one restaurant’s chops from another’s is entirely upstream of the kitchen: the age of the lamb, how it was raised, how it was hung, how it was cut. The grill is the last five minutes of a long story.

How we prepare it at Anatolia Grill

Our lambs are bred and raised at our farm in Rakovník and processed in our own slaughterhouse, so we know the age and the handling of every animal. The chops are grilled over charcoal to order and served with chips, grilled tomato, chilli pepper and pita bread. 250 g for 690 CZK.

Take it home from Anatolia Meat Market

The same chops are on the counter at the Anatolia Meat Market next door, cut fresh by our butcher. If you want a rack for the weekend or a specific thickness, they will prepare it — special orders are what the shop is there for.

From our own farm, not from a supplier

Anatolia Grill is part of Agro Řeřichy s.r.o., a Czech company that has been working in agriculture, meat processing and gastronomy for more than ten years. We breed our own lambs and fatten our own beef cattle at the farm in Rakovník, process them in our own slaughterhouse, and sell them in our own butchery in Prague — the shop right next to this restaurant. That is the reason the meat on your plate is traceable back to a single chain we control from start to finish.
