About the author : Anatolia
Turkey’s most reliable crowd-pleaser: thin pastry, salty white cheese, hot oil, thirty seconds of patience before you burn your mouth anyway.
What is sigara böreği (fried cheese rolls)?
These are sigara böreği — literally “cigarette pastries”, named for their shape. A sheet of thin yufka pastry is spread with crumbled white cheese and chopped parsley, rolled tight, and deep-fried until the outside blisters and shatters. They appear at every Turkish celebration, at breakfast tables, and on meze plates. Nobody in Turkey eats just one.
How we prepare it at Anatolia Grill
We roll ours by hand and fry them to order, never in advance — a börek that has been sitting under a lamp is a different and much sadder food. The filling is white cheese with fresh parsley, seasoned lightly so the cheese stays the point. Six rolls for 109 CZK, which also makes this the cheapest way to start a meal here.
Take it home from Anatolia Meat Market
The white cheese we use, and the yufka pastry sheets these are rolled from, are both sold at the Anatolia Meat Market next door. They are genuinely easy to make at home once you have the right pastry — the rolling takes ten minutes and the frying takes two.
From our own farm, not from a supplier
Anatolia Grill is part of Agro Řeřichy s.r.o., a Czech company that has been working in agriculture, meat processing and gastronomy for more than ten years. We breed our own lambs and fatten our own beef cattle at the farm in Rakovník, process them in our own slaughterhouse, and sell them in our own butchery in Prague — the shop right next to this restaurant. That is the reason the meat on your plate is traceable back to a single chain we control from start to finish.
