About the author : Anatolia

Shepherd’s salad. It sits on every table in Turkey, every day, and it is the default companion to anything off a grill.

What is çoban salatası (shepherd’s salad)?

Çoban salatası is tomato, cucumber, green pepper and onion, chopped and dressed with olive oil and lemon. That is all of it. Its name comes from the idea that a shepherd could assemble it from whatever he was carrying, and its universality in Turkey is exactly the point: it is not a special dish, it is what a table has on it. The only real variables are how finely you chop and whether you add sumac or pomegranate molasses.

How we prepare it at Anatolia Grill

Ours is dressed with olive oil and pomegranate molasses, which gives it a touch more depth than the plain lemon version. Chopped fresh to order, 189 CZK. If you are ordering a full grill plate, this is the lightest thing to put next to it.
