About the author : Anatolia
The vegetarian pide, and the one children order without being asked twice.
What is kaşarlı pide (cheese pide)?
Cheese pide is the plainest member of the family and the one that shows the bread most clearly. With nothing but melted kaşar on top, there is no meat and no sauce to distract from the dough — so the base has to be crisp, the rim has to be soft and chewy, and the shaping has to be right. In Turkish bakeries this is the pide that gets made for children and for anyone who wants something simple, and it is a proper dish rather than a fallback.
How we prepare it at Anatolia Grill
Hand-shaped dough, melted kaşar, baked until the cheese is bubbling and the base is golden. 259 CZK, and fully vegetarian. If you want it with sucuk on top, that version is 310 CZK.
Take it home from Anatolia Meat Market
The kaşar cheese is on the counter at the Anatolia Meat Market next door, along with the white cheeses, olives and yufka pastry.
From our own farm, not from a supplier
Anatolia Grill is part of Agro Řeřichy s.r.o., a Czech company that has been working in agriculture, meat processing and gastronomy for more than ten years. We breed our own lambs and fatten our own beef cattle at the farm in Rakovník, process them in our own slaughterhouse, and sell them in our own butchery in Prague — the shop right next to this restaurant. That is the reason the meat on your plate is traceable back to a single chain we control from start to finish.
