About the author : Anatolia
Supermarket hummus and real hummus are two different foods that happen to share a name. Ours is the second kind.
What is hummus?
Hummus is chickpeas mashed with tahini, and the ratio between those two is the whole argument. Too little tahini and it tastes like chickpea paste; too much and it turns bitter. Cumin, olive oil, lemon and garlic finish it. In Turkey — particularly in Antakya and the south — it is often served slightly warm and topped with pine nuts in butter, which is a long way from the cold tub in a fridge aisle. What matters most is that the chickpeas are cooked far past the point of being done, until they surrender completely.
How we prepare it at Anatolia Grill
We mash rather than over-process, keep the tahini generous, and season with cumin and good olive oil. It is served at 139 CZK with warm homemade bread, and it is part of our Mixed Appetizers plate if you would rather try seven mezes at once.

Frequently asked questions
Where can I eat authentic hummus in Prague?
At Anatolia Grill Restaurant, Na Poříčí 1933/36, Praha 1 — a few minutes on foot from Náměstí Republiky, open daily 08:00 to midnight.
Is your hummus vegan?
The hummus itself is made from chickpeas, tahini, olive oil, lemon, garlic and cumin. Tell your server you are ordering it vegan so the kitchen serves it without a dairy garnish.
What is the difference between Turkish and Levantine hummus?
Turkish versions, especially from Antakya, are often served warm and topped with butter and pine nuts, and tend to be a little heavier on cumin. Levantine hummus is usually served cool and smoother.
Can I try several mezes instead of just one?
Yes — our Mixed Appetizers plate brings seven of them, including this hummus, for 299 CZK.
