About the author : Anatolia

The most famous kebab in Turkey, and a legally protected one — in Adana, the recipe is registered.

What is Adana kebap?

Real Adana kebap is minced by hand with a zırh, a curved knife, never in a machine, because the texture of hand-chopped lamb is completely different from ground meat. It is mixed with tail fat and hot red pepper, pressed by hand onto a wide flat skewer, and grilled over charcoal so the fat renders through it. The dish carries a registered geographical indication in Turkey, which specifies the meat, the fat and the pepper. Its defining quality is heat — a mild Adana is a contradiction, and the milder version has its own name, urfa kebap.

How we prepare it at Anatolia Grill

Ours is minced lamb seasoned with hot red pepper, shaped onto flat skewers and grilled over charcoal to order. 180 g for 399 CZK, served with grilled tomato, chilli pepper, bulgur and pita bread. Order acılı ezme and haydari with it — one to push the heat further, one to pull it back.

Take it home from Anatolia Meat Market

The lamb comes from our own flock in Rakovník. The Anatolia Meat Market next door sells the same lamb, and the butcher will prepare mince for kebab if you tell them what you are making.

From our own farm, not from a supplier

Anatolia Grill is part of Agro Řeřichy s.r.o., a Czech company that has been working in agriculture, meat processing and gastronomy for more than ten years. We breed our own lambs and fatten our own beef cattle at the farm in Rakovník, process them in our own slaughterhouse, and sell them in our own butchery in Prague — the shop right next to this restaurant. That is the reason the meat on your plate is traceable back to a single chain we control from start to finish.
