About the author : Anatolia
Two ingredients, stirred together at the table, that every Turkish child grew up on — and that almost no visitor to Prague has tried.
What is tahin-pekmez (tahini and grape molasses)?
Tahin-pekmez is sesame paste swirled into grape molasses. The tahini is bitter and nutty; the pekmez, made by boiling down grape must without any added sugar, is dark, mineral and only moderately sweet. Apart they are both quite serious flavours. Together they turn into something like a natural, unrefined chocolate spread — which is exactly how it is used, spread on bread at breakfast. In Anatolia it was traditionally fed to children in winter as an energy and iron source, long before anyone used the phrase “superfood”.
How we prepare it at Anatolia Grill
We serve them side by side in one dish rather than pre-mixed, so you can set the ratio yourself — more pekmez if you want it sweeter, more tahini if you want it nuttier. It comes with warm homemade bread. 89 CZK, and it is the item we most often recommend to guests who tell us they have eaten Turkish food before but want something they genuinely have not.
Take it home from Anatolia Meat Market
Both are sold by the jar at the Anatolia Meat Market next door. A jar of each keeps for months in the cupboard and turns an ordinary breakfast at home into a Turkish one.
From our own farm, not from a supplier
Anatolia Grill is part of Agro Řeřichy s.r.o., a Czech company that has been working in agriculture, meat processing and gastronomy for more than ten years. We breed our own lambs and fatten our own beef cattle at the farm in Rakovník, process them in our own slaughterhouse, and sell them in our own butchery in Prague — the shop right next to this restaurant. That is the reason the meat on your plate is traceable back to a single chain we control from start to finish.
