About the author : Anatolia

The simplest thing on our breakfast menu, and the one that is hardest to get right. The difference is the cheese.

What is a Turkish cheese omelette?

A Turkish cheese omelette is not made with cheddar or emmental. It uses kaşar — a firm, mild, slightly sweet cow’s milk cheese that melts into long threads rather than turning oily. Folded into softly cooked eggs, it gives an omelette that is creamy in the middle and holds together without any flour or cream. In Turkey it is what you order when you want breakfast but not a whole table of it.

How we prepare it at Anatolia Grill

We cook the eggs gently and pull the pan early, so the omelette is still soft when the kaşar goes in and finishes melting on the way to your table. It is served with warm homemade bread. At 149 CZK it is the most affordable breakfast on our menu, which makes it the usual choice for guests who want something quick before walking into the old town.

Take it home from Anatolia Meat Market

The kaşar we fold into it, along with the white cheeses, butter and farm eggs from our own production, is sold at the Anatolia Meat Market a few steps away — so the omelette you eat here is genuinely reproducible in your own kitchen.

From our own farm, not from a supplier

Anatolia Grill is part of Agro Řeřichy s.r.o., a Czech company that has been working in agriculture, meat processing and gastronomy for more than ten years. We breed our own lambs and fatten our own beef cattle at the farm in Rakovník, process them in our own slaughterhouse, and sell them in our own butchery in Prague — the shop right next to this restaurant. That is the reason the meat on your plate is traceable back to a single chain we control from start to finish.
