What is ali nazik?
Ali nazik comes from Gaziantep, the city widely regarded as the capital of Turkish gastronomy. Eggplants are charred whole over fire, peeled, chopped and beaten together with garlic and thick yogurt into a smoky, creamy base. Grilled minced lamb goes on top, with butter poured over. The name is said to come from a sultan asking who prepared such a dish — “eli nazik“, the gentle hand. Its power is in the contrast: cool smoky yogurt underneath, hot charred lamb on top, and the two meeting in every forkful.
How we prepare it at Anatolia Grill
We char the eggplants on the same charcoal grill as the meat, which is the only way to get real smoke into the base. The lamb is minced from our own animals, grilled to order and laid over the top. 420 CZK. It comes without bulgur or bread as standard — the eggplant base is the starch and the substance both.
Take it home from Anatolia Meat Market
The lamb is raised on our own farm in Rakovník. The Anatolia Meat Market next door sells the same lamb, minced fresh, and the butcher can advise on the right cut.
From our own farm, not from a supplier
Anatolia Grill is part of Agro Řeřichy s.r.o., a Czech company that has been working in agriculture, meat processing and gastronomy for more than ten years. We breed our own lambs and fatten our own beef cattle at the farm in Rakovník, process them in our own slaughterhouse, and sell them in our own butchery in Prague — the shop right next to this restaurant. That is the reason the meat on your plate is traceable back to a single chain we control from start to finish.
