About the author : Anatolia

The hardest thing on this menu to make, and the cheapest thing on it to order.

What is içli köfte (stuffed meatballs)?

İçli köfte is a shell of fine bulgur and semolina, shaped by hand around a filling of minced meat cooked with onions, walnuts and spices, then deep-fried. The difficulty is the shell: it has to be worked thin enough to be delicate but not so thin that it splits in the oil, and it is formed around one finger, hollowed out and closed by hand. In south-eastern Turkey, women who make good içli köfte are genuinely locally famous for it. Related versions exist across the region as kibbeh.

How we prepare it at Anatolia Grill

Ours are shaped by hand and fried to order so the shell is crisp and the filling still steaming. The filling is spiced minced meat from our own production, with onion and nuts. 89 CZK per piece — order two or three as a warm starter before the grill arrives.

Take it home from Anatolia Meat Market

The minced beef and lamb inside comes from animals raised on our own farm. The Anatolia Meat Market next door sells the same mince, freshly ground, if you are brave enough to attempt the shell at home.

From our own farm, not from a supplier

Anatolia Grill is part of Agro Řeřichy s.r.o., a Czech company that has been working in agriculture, meat processing and gastronomy for more than ten years. We breed our own lambs and fatten our own beef cattle at the farm in Rakovník, process them in our own slaughterhouse, and sell them in our own butchery in Prague — the shop right next to this restaurant. That is the reason the meat on your plate is traceable back to a single chain we control from start to finish.
