What is acılı ezme (spicy tomato dip)?

Acılı ezme means “spicy crushed”. It is tomato, green chilli, onion and parsley chopped very fine by hand — never blended, because a puree turns it into salsa and loses the texture entirely. Some regions add pomegranate molasses or walnut; in the south-east, around Gaziantep and Adana, it is made hot enough to be a challenge. Its job at the table is to cut through the fat of grilled lamb, and it does that better than any sauce.
