Two minutes in a very hot oven is the whole recipe. Everything else is dough, and the dough is where restaurants cut corners.

What is lahmacun?

Lahmacun is a thin round of dough spread with minced beef and lamb mixed with tomato, pepper, onion and parsley, then baked at high heat until the edge blisters and the base crisps. The name comes from Arabic lahm bi ajin, “meat with dough”. It is not a pizza: no cheese, no sauce base, no rising crust — the dough is rolled paper-thin and the topping is a thin smear rather than a layer. You squeeze lemon over it, add parsley and onion, roll it and eat it with your hands.

How we prepare it at Anatolia Grill

We make the dough by hand and bake each lahmacun to order, because one that has been sitting turns leathery within minutes. You can order it three ways: a small one at 69 CZK, a full-size one at 139 CZK, or a portion of four small at 259 CZK for the table. Lemon and parsley come with it.

Take it home from Anatolia Meat Market

The beef and lamb mince is ground from our own animals and sold at the Anatolia Meat Market next door — the butcher will mix it to lahmacun proportions if you tell them what you are making.

From our own farm, not from a supplier

Anatolia Grill is part of Agro Řeřichy s.r.o., a Czech company that has been working in agriculture, meat processing and gastronomy for more than ten years. We breed our own lambs and fatten our own beef cattle at the farm in Rakovník, process them in our own slaughterhouse, and sell them in our own butchery in Prague — the shop right next to this restaurant. That is the reason the meat on your plate is traceable back to a single chain we control from start to finish.

No. There is no cheese, the dough is paper-thin and crisp rather than risen, and the meat is a thin spread. It is a different food that gets an unhelpful nickname.
