About the author : Anatolia

The dish every Turkish person judges a grill restaurant by. If the köfte is good, the rest usually is too.

What is ızgara köfte (grilled meatballs)?

Izgara köfte is minced lamb and beef, seasoned, rested, shaped by hand and grilled over charcoal. There is nowhere to hide in it: no marinade, no sauce, no long cooking to soften a poor cut. What you taste is the meat, the salt, the resting and the fire. Every region of Turkey has its own version — flatter in İnegöl, spicier in the south-east — and the argument over which is correct has been going for a very long time.

How we prepare it at Anatolia Grill

We grind our own lamb and beef, shape the köfte by hand and cook them over charcoal. A 200 g portion is 349 CZK and comes with grilled tomato and chilli pepper, bulgur and pita bread. Order acılı ezme alongside it — that combination is how it is eaten in Turkey.

Take it home from Anatolia Meat Market

Everything here starts at our own farm in Rakovník. The Anatolia Meat Market next door sells the same lamb and beef mince, ground fresh, and the butcher will mix it to köfte proportions if you ask.

From our own farm, not from a supplier

Anatolia Grill is part of Agro Řeřichy s.r.o., a Czech company that has been working in agriculture, meat processing and gastronomy for more than ten years. We breed our own lambs and fatten our own beef cattle at the farm in Rakovník, process them in our own slaughterhouse, and sell them in our own butchery in Prague — the shop right next to this restaurant. That is the reason the meat on your plate is traceable back to a single chain we control from start to finish.
