About the author : Anatolia
There are only two of these on each animal. That is the entire explanation for both the texture and the price.
What is grilled lamb tenderloin?
The tenderloin is the muscle that runs along the inside of the spine and does almost no work, which is why it is the most tender cut on the animal — and why there is so little of it. On lamb the pieces are small, lean and delicate, and they cook very quickly. Over-cook a tenderloin by two minutes and you have thrown away the only reason to order it. Turkish grill cooks treat it with a light hand: salt, fire, rest.
How we prepare it at Anatolia Grill
Grilled over charcoal to order and pulled while still pink in the middle unless you ask otherwise. Served with chips, grilled tomato, chilli pepper and pita bread. 200 g for 690 CZK. If you are choosing between this and the lamb chops, the chops give you more flavour from the bone and the fat, and the tenderloin gives you texture.
Take it home from Anatolia Meat Market
Lamb tenderloin is a cut most Prague butchers do not carry. Ours is available at the Anatolia Meat Market next door, from our own animals — worth calling ahead on +420 727 974 844, as there are only two per lamb.
From our own farm, not from a supplier
Anatolia Grill is part of Agro Řeřichy s.r.o., a Czech company that has been working in agriculture, meat processing and gastronomy for more than ten years. We breed our own lambs and fatten our own beef cattle at the farm in Rakovník, process them in our own slaughterhouse, and sell them in our own butchery in Prague — the shop right next to this restaurant. That is the reason the meat on your plate is traceable back to a single chain we control from start to finish.

Frequently asked questions
Where can I eat grilled lamb tenderloin in Prague?
At Anatolia Grill Restaurant, Na Poříčí 1933/36, Praha 1, every day from 08:00 to midnight.
Why is lamb tenderloin more expensive?
There are only two small tenderloins on each animal, and it is the most tender cut. Scarcity, not seasoning, sets the price.
Can I ask for it well done?
Yes, tell your server. We cook it pink by default because that is where the texture is best.
Where can I buy lamb tenderloin in Prague?
At the Anatolia Meat Market next door. Call ahead on +420 727 974 844 — supply is limited by definition.
