About the author : Anatolia
A steak from cattle we fattened ourselves, cooked over charcoal rather than in a pan. That is a different piece of meat and a different flavour.
What is grilled entrecôte?
Entrecôte is cut from the rib section, between the ribs — well marbled, which is why it stays juicy over high heat and why it carries flavour that leaner steaks do not. Maturing matters as much as the cut: hanging the beef breaks down the muscle and concentrates the taste. Over charcoal rather than a pan, the rendering fat drips onto the coals and comes back as smoke, which is the whole reason a grilled steak tastes different from a fried one.
How we prepare it at Anatolia Grill
We use matured entrecôte from cattle fattened at our own farm, grilled over charcoal to your preference and served with chips, grilled tomato and chilli pepper. 220 g for 690 CZK. Tell your server how you want it cooked — the kitchen will not decide for you.
Take it home from Anatolia Meat Market
Entrecôte, tenderloin and the rest of our beef are cut daily at the Anatolia Meat Market next door. If you want a steak of a particular thickness or a larger order for an event, the butcher will prepare it — call +420 727 974 844.
From our own farm, not from a supplier
Anatolia Grill is part of Agro Řeřichy s.r.o., a Czech company that has been working in agriculture, meat processing and gastronomy for more than ten years. We breed our own lambs and fatten our own beef cattle at the farm in Rakovník, process them in our own slaughterhouse, and sell them in our own butchery in Prague — the shop right next to this restaurant. That is the reason the meat on your plate is traceable back to a single chain we control from start to finish.
