About the author : Anatolia
The salad that makes people who never order salad order salad. Walnuts and pomegranate molasses are the reason.
What is gavurdağı salatası?
Gavurdağı takes its name from a mountain range in the Turkish south. Everything in it is chopped to the same small dice — tomato, cucumber, red onion — which matters, because the texture is uniform and every spoonful is complete. What lifts it above an ordinary chopped salad is the dressing of nar ekşisi, pomegranate molasses, which is tart and syrupy rather than sweet, and the crushed walnuts scattered over the top. Pomegranate seeds add another layer of the same sourness.
How we prepare it at Anatolia Grill
We dice by hand, dress with olive oil, lemon and pomegranate molasses, and finish with crushed walnuts and pomegranate seeds. 199 CZK. Order it with grilled lamb — the sourness does the same job as the mezes do, cutting through charcoal and fat.
