About the author : Anatolia
The same charcoal-grilled Adana that comes on our plates, rolled into bread we make ourselves. Spicy, and portable.
What is an Adana kebab wrap (dürüm)?
A dürüm is a wrap made with thin unleavened flatbread — much thinner and more pliable than a tortilla — rolled tightly around meat straight off the grill. With Adana kebab inside, the bread does something specific: it absorbs the rendered fat and the red pepper oil coming off the kebab, so by the time you reach the middle the bread itself is part of the flavour. This is how Adana is eaten on the street in southern Turkey.
How we prepare it at Anatolia Grill
We grill the Adana over charcoal to order, exactly as we do for the plate version, then roll it in our own homemade flatbread. Served with chips and tomatoes, 380 CZK. It is genuinely spicy — Adana is defined by hot red pepper, and we do not tone it down.
Take it home from Anatolia Meat Market
The lamb is minced from our own flock in Rakovník. The Anatolia Meat Market next door sells the same lamb, and the butcher prepares kebab mince on request.
From our own farm, not from a supplier
Anatolia Grill is part of Agro Řeřichy s.r.o., a Czech company that has been working in agriculture, meat processing and gastronomy for more than ten years. We breed our own lambs and fatten our own beef cattle at the farm in Rakovník, process them in our own slaughterhouse, and sell them in our own butchery in Prague — the shop right next to this restaurant. That is the reason the meat on your plate is traceable back to a single chain we control from start to finish.
