About the author : Anatolia

Charcoal-grilled lamb is a hard thing to pair badly, but it is an easy thing to pair lazily. Here is what actually works.

What is wine and beer with Turkish food?

Turkish grilled meat brings three things to the table that decide the pairing: smoke from the charcoal, fat from lamb, and red pepper heat from the kebabs. Red wine works when it has enough acidity to cut the fat — a Chianti does this well, which is why it sits at the top of our list. White wine and prosecco belong with the mezes and the fish-free cold starters rather than with the grill. Beer is the pragmatic choice with anything spicy: a pilsner’s bitterness resets the palate between mouthfuls of Adana. And rakı is the traditional answer, which is a category of its own.

How we prepare it at Anatolia Grill

We pour wine by the 150 ml glass and by the 750 ml bottle, so a table can share a bottle or everyone can have something different. Beers run from Czech pale lagers to Belgian wheat beer. If you are eating Adana kebab or anything with acılı ezme, take a beer or şalgam. If you are eating lamb chops, entrecôte or the mixed grill, take the Chianti. If you have an evening rather than an hour, take rakı and start with mezes.

Pilsner Urquell and Staropramen from the Czech Republic, plus Stella Artois, Hoegaarden and Corona. Prices run from 90 to 139 CZK.
