About the author : Anatolia

Three drinks that will not be on any other menu on this street, and the reason your kebab tastes better in Turkey than at home.

What is traditional Turkish cold drinks?

Turkish grilled meat is designed around what you drink with it. Ayran is yogurt whisked with water and salt — savoury, not sweet, and slightly foamy — and it is the near-universal partner to kebab because the fat and the acidity cancel each other out. Şalgam is fermented purple carrot and turnip juice from Adana, sour and salty and available spicy or mild; it is an acquired taste and it is the traditional companion to both Adana kebab and rakı. Turkish lemonade is the outlier: made with whole lemons including the zest, often with mint, and much more aromatic than a syrup-based lemonade.

How we prepare it at Anatolia Grill

We serve all three: ayran at 69 CZK, şalgam at 79 CZK in spicy or regular, and Turkish lemonade at 79 CZK for 250 ml. If you are ordering Adana kebab, take the şalgam — that pairing is not a suggestion in southern Turkey, it is the default. With anything grilled, ayran.

Frequently asked questions

Where can I buy ayran in Prague?

You can drink it at Anatolia Grill Restaurant, Na Poříčí 1933/36, Praha 1, for 69 CZK — and buy it to take home from the Anatolia Meat Market next door.

What is şalgam?

Fermented purple carrot and turnip juice from the Adana region. It is sour and salty rather than sweet, and comes spicy or mild.

What should I drink with kebab?

Ayran with anything grilled; şalgam specifically with Adana kebab. Both cut through the fat in a way that a soft drink does not.

Is ayran sweet?

No. It is salted yogurt thinned with water — savoury and slightly sour. People expecting a sweet lassi are always surprised.
