What is köpoğlu ezmesi?

Köpoğlu takes the eggplant-and-yogurt idea and adds roasted peppers to it. Both vegetables are blackened over flame until the skins char and lift away, then blended with garlic, yogurt and olive oil. The peppers bring a sweetness that plain eggplant meze does not have, and the smoke goes deeper because two vegetables have been over the fire instead of one. It is a southern Turkish meze and it is best when the char is not tidied away.

How we prepare it at Anatolia Grill

Both the eggplants and the peppers go over our charcoal grill — the same fire the kebabs are cooked on — so the smoke is real rather than added. They are peeled, blended with garlic yogurt and olive oil, and served cool with warm homemade bread. 139 CZK.
