About the author : Anatolia
Cubes of meat, not mince. The version that tastes most obviously of the animal it came from.
What is kuşbaşılı pide (diced meat pide)?
Kuşbaşı means “bird’s head” — the Turkish term for meat cut into small cubes. On a pide it behaves very differently from mince: the pieces stay distinct, they brown at the edges in the oven, and you get texture in every bite instead of an even layer. Pide itself is the boat-shaped Turkish flatbread, its edges folded up to hold the topping, baked directly on the oven floor so the base is crisp and the rim is soft.
How we prepare it at Anatolia Grill
We hand-shape the dough into the traditional boat and top it with cubes of our own seasoned beef, then bake it until the base crisps and the meat catches colour. 299 CZK. There is a version with melted cheese added at 319 CZK if you want it richer.
Take it home from Anatolia Meat Market
The beef is from cattle we raise ourselves. The Anatolia Meat Market next door sells the same meat, and the butcher will cut it kuşbaşı for you.
From our own farm, not from a supplier
Anatolia Grill is part of Agro Řeřichy s.r.o., a Czech company that has been working in agriculture, meat processing and gastronomy for more than ten years. We breed our own lambs and fatten our own beef cattle at the farm in Rakovník, process them in our own slaughterhouse, and sell them in our own butchery in Prague — the shop right next to this restaurant. That is the reason the meat on your plate is traceable back to a single chain we control from start to finish.
