About the author : Anatolia
The leanest and most tender cut on the animal, cooked over charcoal and seasoned with almost nothing.
What is grilled beef tenderloin?
Beef tenderloin — filet — comes from the muscle along the spine that carries no load, which is why it is so tender and why there is comparatively little of it. It is lean, so it has less of the fat-driven flavour of an entrecôte, and it depends entirely on not being over-cooked. Over charcoal it picks up smoke on the outside while staying soft in the middle. In Turkish grill cooking the treatment is deliberately minimal: salt, fire, rest, serve.
How we prepare it at Anatolia Grill
We grill tenderloin from our own cattle over charcoal, seasoned simply so nothing competes with the meat, and cook it to the doneness you ask for. 690 CZK, served with grilled vegetables and pita bread. If you want the tenderness, order this; if you want the deeper beef flavour, order the entrecôte.
Take it home from Anatolia Meat Market
Beef tenderloin is cut to order at the Anatolia Meat Market next door, from the same cattle. Call +420 727 974 844 ahead for larger cuts or a whole fillet.
From our own farm, not from a supplier
Anatolia Grill is part of Agro Řeřichy s.r.o., a Czech company that has been working in agriculture, meat processing and gastronomy for more than ten years. We breed our own lambs and fatten our own beef cattle at the farm in Rakovník, process them in our own slaughterhouse, and sell them in our own butchery in Prague — the shop right next to this restaurant. That is the reason the meat on your plate is traceable back to a single chain we control from start to finish.
